Marlin Recruitment is currently seeking a highly experienced Food & Beverage Manager to join a UHNW Family in the Middle East. All applicants must have a minimum of five years experience working in luxury 5* Hotel F&B Management or in a large private residence. Only Female candidates need apply for cultural reasons.

Responsibilities will include:

  • Driving initiatives in Food & Beverage products and introduce procedures and processes to ensure and maintain high standards
  • Willingness to source new suppliers and keep up-to-date on the culinary trends and advancements
  • Approve daily purchase orders for the kitchens, crosschecking the items received against purchase order, inspecting the quality of fresh produce received and liaising with suppliers closely to sustain the very best in ingredients are delivered
  • Liaising between two separately run kitchens to ensure teams are kept fully informed as to the culinary needs of the household
  • Training staff and having proactive meetings with regards to enhancing a collective knowledge on ingredients, dishes, techniques, etc
  • Training staff in the ways and means of professional presentation, service and communication, etc
  • Understanding and knowledgeable across various diets, cuisines, nutritional movements, etc
  • Ensure food safety standards are upheld and any safety hazards are resolved immediately
  • Weekly stock control and inventory management

The successful candidate will need:

  • To demonstrate a passion for great food and excellence service – to have proactively followed the developments in the food industry, attend food exhibitions, etc
  • Strong and established experience of hosting and managing banquets and training staff for such events
  • Extensive experience in Silver Service dinning and etiquette
  • Exceptional organisational and time management skills
  • Approachable and dedicated to successful team environment
  • A very hands on-approach, willing to assist and take on menial duties as and when they need to be completed
  • Keen eye for detail and a constant need to strive for the very best
  • Uphold and maintain discretion across the property and the position itself
